It really is. And even I'm okay with the level of prep this requires since I streamlined a few things (a jar of minced garlic and dried minced onions). This is the second time I've made it, and I think I did a bit better this time around - a little less salty. I had two bowls and there was still enough leftover for me to divide it into four bowl-sized portions.
You can probably just break the carrots up when you eat the soup? I started tossing bags of baby carrots into my stews just to make "more" of it or to stretch the left overs out. No complaints.
I've been to the doctor twice. The current verdict is tennis elbow (I'm still somewhat doubtful of this) - the doctor gave me an anti-inflammatory gel to use 2-4 times a day for a couple weeks, to see if it made a difference. If not, he said we could try a shot that might help. It's been almost a week now, and I'm not sure if there's much difference. I'm considering calling this week, because sometimes my elbow is tender enough (usually by evening) that just putting on the gel makes it ache. I want to know first whether the shot has drawbacks - potential side effects, could make things worse, etc. I kind of want a second opinion too but am not sure how to go about that, particularly right now.

It might be difficult right now with covid, but have you tried massage therapy? My therapist helped me a lot with similar problems.
Btw, is there any prospect of you getting to see someone about your elbow situation? It sounds really painful.
