I really like the concept of a challenge that focuses on books set in places other than the UK/US. There are so many, many other places to explore and books are great for going on an adventure right from your armchair (or other favourite place of reading).
There are way too many books I can think of that I would recommend, but one of the series that really impressed me was Clavell's Asian Saga (King Rat, Shogun, Gai-Jin, Tai-Pan, Noble House). They are all set in Asia: Singapore (King Rat), Japan (Shogun), Hong Kong (Tai-Pai, Gai-Jin, Noble House). And they all cover different time periods between the 1500s (Shogun) and the 1960s (Noble House).

What are you looking for in a book not set in the US/UK?

Yea me too! Ah nice. Mostly what I look for if a book does not take place in the US/UK are books with a unique story and that you'll maybe learn about the culture of that country as well. :)

You will see that next time hahaha. No I'm kidding. Actually I have some on my tbr that I would include in the other six such as Robinson Cruseo. Is the moon also a good one? Then I will def mention 172 Hours On The Moon. :P and Anne Frank ofc. (I can't think of any more names now to be honest) (I have read Anne Frank and 172 Hours On The Moon)
