It seems that the character who ate himself may have cut strips of his stomach off and ate them??

I've always read a lot of Fantasy, and this doesn't sound familiar. But that just means I unfortunately can't help. There's a lot of Fantasy books out there, and a lot of different sorts. So even reading a lot, quite a bit also probably goes past my radar. And this doesn't sound like my cup of tea. Sorry I couldn't help though. Just wanted to pop in so you didn't feel ignored :D

Sounds like something by Terry Goodkind. The series just kept getting more depraved and horrific as it went along so I gave up. Not sure if anyone ate themselves, but there was enough nightmare stuff in those books. Maybe your husband will like those if you can't find the book you are looking for?

Any luck yet? I tried poking around to see what i could find, but nothing definitive.

I did come across Carrion Comfort by Dan Simmons, which might be close.
