I just cannot imagine Amish science fiction unless time travel back to the past or a dystopian future where everyone has to live an Amish lifestyle. Mind-boggling.

Another possibility would be "high-tech colonists went to another planet, something happened to the tech, and everyone had to learn how to live without it," which I've seen often enough in sci fi, but usually generations after the technology has degraded, been destroyed, or otherwise stopped working.

That title...just made me laugh.
