I fail to see the importance of Poncho too.

I was right - Souma considered him important because he'd know about foods that most people in that country didn't normally eat, like octopus and something similar to burdock root. Again, I think this would have been more effective if Poncho had been a gifted chef - just because you've eaten something and enjoyed it doesn't mean you have the foggiest idea how to prepare it.
