You can buy dried shallots. I think green/spring onion, garlic chives or a mild spring leek is closer to shallot than regular garlic, though. And I wouldn't add more salt to the mixture -- just a bit for "finishing" as soon as pulled heat (possibly even a "flavored"salt like one of the seasoning salts or Jane's Krazy Mixed Up Salt . If you have a Penzy's spices near you, they have a Fox Point Seasoning blend that has shallots in it (great with regular and Irish potato cakes but possibly too many other "green" flavors to suite sweet potatoes). I keep freeze-dried chives in stock for potato things,

I'm going to have to look into that seasoning. It sounds like it would be a good addition. I'm going to have to see if I can find it at one of our local grocery stores, and if not, maybe something similar. I've never heard of Penzy's before.

I never thought to try a seasoning blend or flavored salts. But then again, I'm not that great with cooking. Thanks for the tip!
