Sounds like you had a wonderful Christmas -- and that cake still looks delicious! (I hope your oven gets fixed soon ... or if it doesn't, you at least don't have to spend the next couple of days with a murderously dysfunctional family at their country estate only to be in the proximity of functioning modern conveniences!)

I only used about a 1/4 of the butter for the filling, and used brandy cream instead of single cream.
