I made banana bread last week. I'm currently contemplating whatt kind of muffins to make this week!

Ha! I thought about making the banana bread as muffins but then figured I have less washing up using the loaf tin... XD

Me, too! I saw it somewhere a few months ago and fell in love with it. It seriously makes me smile every time I use it. And I use it a lot! :)

We have our meals set for today (my wife is making Mexican quinoa tonight), but later today I'm going to start planning for the week ahead. One consequence of reducing our grocery stores to the bare minimum is figuring out so much of this stuff in advance.

It's fun planning, tho. I haven't been grocery shopping in a while but will need to go tomorrow. I also spent a lot of time yesterday, cutting and blanching veg to freeze in batches for quick use throughout the week. :)

It looks wonderful! I am neither baking nor cooking, unless you count making cornbread from a mix and defrosting red beans & ham that I made several months ago.

The banana bread is lovely and moist, which is an improvement on the last batch. I don't even know what happened last time I made banana bread, but it did not turn out the way I intended. Edible, but not quite as lovely as I hoped. :)
