Those pickles look gorgeous! I keep trying to make pickles but so far I can't find a brine recipe I like (I prefer sweet pickles over dill/sour).

I generally do NOT like sweet pickles (e.g. Bread and Butter Pickles) and still haven't mastered reliable cucumber pickles. I do much better with root veggies (beets, turnips, radishes, carrots).

My basic brine for vinegar based pickles is 1:1 vinegar:water and some kosher salt (about 1 tablespoon per quart) + spices that complement what you are pickling. You could add sugar to taste until the brine is sweet enough if you want a sweet pickle. I usually just make refrigerator pickles, but these wanted to be canned to cook them.

I'll try to find my beet pickle recipe after work tonight.

Ooh... pickled beets. I miss pickled beets. I can grow beets like crazy, but had the same problem with brine when I tried to pickle them. Not sweet enough.
Pickles are cucumbers soaked in evil!!! But, they do look picturesque :)
