SAMPLE RECIPES:

Wrapped pork loin
Serves: 12
Ingredients:
- 2 2lb. pork loin, boneless
- 2 tablespoons red currant jelly
- 1 cup chopped dried black cherries
- 12 slices bacon
- Freshly ground salt and pepper
- 2 tablespoons whole grain mustard
- 2 tablespoons red wine vinegar
- 2 teaspoons chopped crystalized ginger
- 1 teaspoon all spice
Directions:
1. Preheat oven to 350F and prepare a roasting pan.
2. Season pork loins with all spice, salt and pepper.
3. Combine cherries, ginger and mustard in a bowl; spread over pork loins in equal amounts on top.
4. Lay the bacon slices, overlapping over the pork and covering cherry spread. Roast loin for 45 minutes.
5. Combine vinegar and currant jelly; remove loin from the oven and brush bacon with prepared mix.
6. Continue roasting and brushing loin after each 10 minutes until inner temperature is 150 degrees.
7. Place on a wire rack to cool for 10 minutes.
8. Slice before serving.

Peanut butter pie
Serves: 8
Ingredients:
- 1 pie shell, 9-inch
- 5 egg yolks
- 2 cups milk
- 1 cup peanut butter, smooth
- 1 cup confectioners’ sugar
- ½ cup light brown sugar
- ¼ cup cornstarch
- 2 tablespoons butter, unsalted
- 1 teaspoon vanilla
- Small pinch salt
Directions:
1. Preheat oven to 425F.
2. Place pie shell into pie pan; prick several times with a fork.
3. Cover with parchment paper and place fill with dried beans; bake for 20 minutes; remove paper
and beans; bake for 12 minutes more. Set aside to cool completely.
4. Combine confectioners’ sugar and ½ cup peanut butter. You will get crumbly mix; reserve half
of crumbles and spread remaining over pie crust.
5. Whisk sugar and cornstarch in a saucepan; whisk in egg yolks and salt; whisk in the milk until
smooth.
6. Heat over medium heat until custard thickens almost like pudding; remove from the heat and stir
in remaining peanut butter.
7. Stir in butter and vanilla; whisk until smooth.
8. Pour the mix into baked pie crust and sprinkle the peanut butter crumbles over.
9. Refrigerate for 4-6 hours.
10. Slice and serve.
