Who doesn't like cookies? Not many people I would guess. Because of that we decided a cookie recipe book would be just the thing in the Chef’s Choice Recipes range of books. The first problem we had was where to start. I suspect the biggest problem you will have is to know when to stop! These recipes are absolutely delicious, very moreish, and you will want to keep on dipping into the cookie barrel.We have tried to keep things simple, included a few recipes that are a little more unusual, but you will be able to manage them all. We have reproduced these recipes to our own tastes, but you can adjust where your health requires it. For instance; substituting olive oil spread for butter would make the cookies a healthier option. Where a recipe calls for the use of sugar, always remember that whatever the measurement, e.g. 1 cup make sure the sugar is packed into the cup and not loose. We always give a guide to try and give some indication of how much will be produced and in this case how many cookies the recipe will make. This will depend largely on how generous you are with your portions. Here is where you come in. Your feedback on this aspect is very welcome. We would love to hear how many cookies you were able to make from our recipes. Feel free to experiment and add to your own taste, but we like them just as they are!One of the best things we liked about these recipes is that they don't take long to make and they take even less time to bake. So, before you start, make sure you have got all the ingredients! A simple tip, but invaluable when it is pouring with rain outside and you realize you didn't pick up the chocolate chips.You can make your own traditional chocolate chip cookies and cocoa brownies to something a little more seasonal at times with the Spooky cookies for Halloween. We have a few varieties of shortbread and a particular favorite, Raisin and rum sandwiches! Rather than ruin the fun by telling everything that is included, just dive straight in and get your apron on. Later on you could be watching a movie, munching on your own home-made cookies, planning the next batch.Maybe you have never had the pleasure of baking cookies before. Well, have you missed out on something special! There is nothing quite like making your own, and you will find out just how simple they really are to make. The whole thing from start to finish: Shopping for the ingredients, (you get to see what other cool stuff is around also) mixing the ingredients, (it really is remarkably easy) baking the cookies, (there is nothing quite like the smell of baking cookies) and the ultimate test – the taste test (the best bit). The downside – sharing, but who said you have to tell anyone you made some cookies?
