Sunday, Errr, Monday, We Soup!

I missed my Sunday soup post yesterday because of the Super Bowl (Boo, Patriots) but put down your pitchforks, I have not abandoned ye'! I'm souping tonight and you are all invited!

 
Now if the name hasn't alerted you, you are going to want to like avocados for this one.
 
 
 
Behold! Thy bounty of avocados! And cilantro, green onions, and limes. BUT most importantly, AVOCADOS.
 
 
Slab of skinless chicken breast. Don't worry no nipple, FCC should let me be.
 
 
My shredded up chicken always brings the paws to the yard.
 
 
There's not a lot to this soup, but it makes it easier to make :)
 
 
Toppings. $2 tortilla chips, I run a classy joint.
 
 
Finished product. This said it made about 6 servings. I'm calling shenanigans on that. I'd say 2 to a very orphanage 4. I've also never met a serving size that could respect my hunger, NEITHER HERE NOR THERE. 
If you laugh in the face of serving sizes like moi, I'd say you could get away two avocados, unless you have avocado running through your bloodstream. My bowl was packed. This was super good, buy the extra lime for extra lime-y topping, makes it taste even better. This would also be a wonderful summer soup, if you're into that sort of thing, which you totally should be.

Sunday, We Soup!
First off, Happy New Year! I hope however you rang in the new year, you were safe and happy. Here's hoping 2017 is full of happiness and wonderful books for everyone. 
Since it was going to be the first day of the year, I wanted to jazz things up a bit but also was cognizant of how I might be feeling. So, something easy was also a requirement. I found this recipe on Pinterest and voila!
 
 
 
 
I liked the healthy aspect of this one with rice being substituted for noodles.
 
 
Shrimp is also a nice light meat, if you're still feeling any New Years Eve repercussions ;)
 
 
I'm not a big onion fan and often leave it out but gimme my garlic and pepper!
 
 
I have Crohn's Disease, so I have an uber sensitive stomach. I try to eat in accordance with that but food, y'all. The use of the coconut milk was so soothing on my stomach and I had no problems after eating this.
 
 
I always buy more limes if they call for it, because I like a stronger taste and I like garnishes on my plate to feel fancy :)
 
 
 
I was a big fan of this one, super yummy and something different from the usual soup I make. If looking for something quick, easy, and tasteful, I highly recommend this one.

Sunday, We Soup!

I feel like I'm starting to get sick so I thought I'd make this

Flu Fighter Chicken Noodle Soup

 

 

 

I really like the seasoning on they have you put on the chicken.

 

 

But there's not a lot added to this soup, so I ended up feeling like it was too blah, but maybe blah is the best flu fighter ingredient?

 

 

You can add dill for some more flavor, I'm not a fan but the bf is, so guess which bowl is his :)  Peanut butter topped saltines were a secret ingredient I added later. Shhh, don't tell!

Sunday, We Soup!

Sweet and Smoky BBQ Chicken Chili

 

 

 

I just realized my two posts for Sunday Soup are both chili, lol. Chili, soup, same diff! I did the slow cooker version with the hot at 3-4 hrs. The tender chicken, y'all! The use of liquid smoke for this one I think puts it over the top, such good flavoring. The Bf said he wanted to bathe in the smell :)

 

 

 

I love my cilantro, evidence in pictures, the tortilla chips gave it a nice crunch with the beans, and if you like avocado, I definitely suggest putting some in. I used mozzarella cheese but for you cheddar heads, that mixed well too.

Sunday, We Soup!

I can't do every Sunday but I've decided to make the first Sunday of every month Soup day to join in with everyone else :)

 

This Sunday was Easy Spicy White Chicken Chili - Recipe 

 

 

Soups just don't photograph well, do they? This one is very easy to make and so, so good. I like things fairly spicy, so I leave the jalapeno seeds in and I still wouldn't call this hot, more like mild hot. I like it a little more soupy so I add the max amount they list for chicken broth but you could do less to give it more of a chili feel.

 

 

I always buy a third jalapeno for added garnish to add to top, the bf always wants more added spice :) I add shredded mozzarella cheese (you best believe I added a ton more after the picture because moar cheese!) with some ritz crackers crumbled on top. The bf likes shredded cheddar cheese and a dollop of sour cream.

 

 

That's the great thing with this soup, you can personalize it with garnishes. If you left out the cheese, this is also amazingly low in calories and if you use the low sodium broth, it just gets healthier.
