It's OK, I just posted a very brief preview for the next 3 weeks at the end of my summary post for the first week of the game. :)
How do we use a Joker for a task? I am never going to do the borscht one, so wanted to play my last Joker card.

Unless TA has another suggestion, I'd say just declare the use of the joker on your tracking post, under the Borscht Task, and note what you're reading.

Hi, I was just wondering, can I go back to the beginning of the challenge and do a door that was opened back then? I have the perfect book for the most recently opened door (Down by the River by Edna O'Brien), Human Rights day, but I'd rather read that book after I've finished my current reads. Is it okay if I go back to that challenge at a later date, basically pick and choose? Many thanks.

That's totally OK. You can do the tasks in any order you like (including the books). You can also retroactively apply a book you read earlier (at any time since Nov.1) to a door only opened later in the game.
Good. I assumed I could do this anyway. :)
